Spinach and Egg Breakfast Bake

4 cups fresh spinach, roughly chopped

6 large eggs

1 cup milk (or dairy-free alternative)

1 cup shredded cheddar cheese (or cheese of your choice)

1/2 cup diced onion

1/2 cup diced bell pepper (red or yellow)

2 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for spice)

1 teaspoon olive oil

1/2 cup breadcrumbs (for topping, optional)

Fresh herbs for garnish (e.g., parsley or chives)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté the Veggies: In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing for about 5 minutes until softened. Stir in the minced garlic and cook for an additional minute until fragrant. Add the chopped spinach and cook until wilted. Remove from heat and let cool slightly.

      Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs and milk. Add in the salt, black pepper, and red pepper flakes. Mix until everything is well combined.

        Combine Ingredients: Once the spinach mixture has cooled slightly, fold it into the egg mixture. Stir in the shredded cheddar cheese.

          Transfer to Baking Dish: Lightly grease a 9x13-inch baking dish or a similar-sized ovenproof dish. Pour the spinach and egg mixture into the dish, spreading it evenly.

            Add Toppings: If desired, sprinkle breadcrumbs on top for added crunch. You can also add a bit more cheese if you want extra cheesiness.

              Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the egg is set and the top is golden brown.
