Spinach and Feta Quesadillas

2 cups fresh spinach, chopped

1/2 cup crumbled feta cheese

1/2 cup shredded mozzarella cheese

1/4 cup diced red onion

1 cloves garlic, minced

4 large flour tortillas

2 tablespoons olive oil

Salt and pepper, to taste

1/2 teaspoon red pepper flakes (optional)

Sour cream or Greek yogurt, for serving

Fresh salsa, for serving

Instructions
 

Sauté the Spinach: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 30 seconds, until fragrant. Then, add the chopped spinach and a pinch of salt and pepper. Cook until the spinach is wilted, about 2-3 minutes. Remove from heat and set aside.

    Mix Filling: In a mixing bowl, combine the sautéed spinach, crumbled feta, shredded mozzarella, diced red onion, and red pepper flakes (if using). Stir well to combine. Taste and adjust seasoning as needed with salt and pepper.

      Prepare Quesadillas: Wipe the skillet clean and return it to the stovetop over medium heat. Lightly spray or drizzle a little olive oil. Place one tortilla in the skillet and spread 1/4 of the spinach and cheese mixture over half of the tortilla.

        Fold and Cook: Fold the tortilla over to cover the filling. Cook for about 3-4 minutes, until golden brown and crispy. Carefully flip the quesadilla and cook the other side for another 3-4 minutes until it’s evenly browned and the cheese has melted.

          Slice and Serve: Remove the quesadilla from the skillet and let it sit for a minute before slicing it into wedges. Repeat the process with the remaining tortillas and filling, adding more oil to the skillet as needed.
