Sticky Honey Garlic Tofu Stir Fry

1 block (14 oz) firm tofu, pressed and cubed

2 tablespoons cornstarch

3 tablespoons vegetable oil (divided)

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 bell pepper, sliced (any color)

1 cup broccoli florets

1 cup snap peas

1 medium carrot, thinly sliced

¼ cup honey

3 tablespoons soy sauce (or tamari for gluten-free)

1 tablespoon rice vinegar

1 teaspoon sesame oil

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Instructions
 

Prepare the Tofu: After pressing the tofu to remove excess moisture, cut it into 1-inch cubes. In a bowl, toss the tofu cubes with cornstarch until they are evenly coated.

    Sauté the Tofu: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Once hot, add the tofu cubes and fry them for about 3-4 minutes on each side, or until golden brown and crispy. Remove the tofu from the skillet and set aside.

      Cook the Vegetables: In the same skillet, add the remaining tablespoon of oil along with the minced garlic and grated ginger. Sauté for about 30 seconds until fragrant. Add the bell pepper, broccoli, snap peas, and carrot. Stir-fry for around 4-5 minutes until the vegetables are tender-crisp.

        Make the Sauce: While the vegetables are cooking, whisk together the honey, soy sauce, rice vinegar, and sesame oil in a small bowl.

          Combine Everything: Once the vegetables are cooked, return the crispy tofu to the skillet. Pour over the honey garlic sauce and stir well to combine. Let everything cook together for 2-3 minutes, allowing the sauce to thicken and coat all the ingredients.

            Serve: Remove from heat and garnish with chopped green onions and a sprinkle of sesame seeds. Serve hot over steamed rice or noodles to soak up all that delicious sticky sauce!
