500g (1 lb) boneless, skinless chicken thighs, diced

1/4 cup soy sauce (low sodium recommended)

1/4 cup honey

2 tbsp sesame oil

2 cloves garlic, minced

1 tsp fresh ginger, grated

1/2 tsp red pepper flakes (optional, for spice)

1 tbsp rice vinegar

2 green onions, chopped (for garnish)

1/4 cup fresh cilantro, chopped (for garnish)

1/4 cup chopped roasted peanuts (for crunch)

1 head of butter lettuce or iceberg lettuce, leaves separated

Instructions
 

Marinate the Chicken:

    In a medium bowl, whisk together the soy sauce, honey, sesame oil, minced garlic, grated ginger, red pepper flakes (if using), and rice vinegar. Add the diced chicken thighs to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for optimal flavor).

      Cook the Chicken:

        Heat a large skillet over medium-high heat. Once hot, add the marinated chicken along with all the marinade. Sauté the chicken for about 8-10 minutes, stirring occasionally, until the chicken is cooked through and has a sticky glaze. The sauce should thickly coat the chicken by the end of cooking.

          Prepare the Lettuce Cups:

            While the chicken is cooking, wash and dry the lettuce leaves. Choose the largest intact leaves to serve as your cups.

              Assemble the Cups:

                Once the chicken is cooked and slightly cooled, spoon a generous portion of the sticky honey soy chicken into each lettuce leaf.

                  Garnish & Serve:

                    Top with chopped green onions, fresh cilantro, and chopped roasted peanuts for added flavor and crunch. Serve immediately while the chicken is still warm.
