Ingredients

2 ripe avocados

1 can (5 oz) tuna, drained

1/4 cup mayonnaise (or Greek yogurt for a healthier option)

1 tablespoon Dijon mustard

1/4 cup red onion, finely chopped

1/4 cup celery, finely chopped

1/4 cup sweet pickle relish (or chopped pickles)

1 teaspoon lemon juice

Salt and pepper to taste

1 cup shredded cheddar cheese (or your favorite cheese)

Fresh parsley, chopped (for garnish)

Optional: Sliced tomatoes for topping

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Avocados: Cut the avocados in half lengthwise and remove the pit. Scoop out a bit of the flesh to create a larger cavity for the tuna salad. (Save the scooped avocado for another use or mash it as a topping.)

Make the Tuna Salad: In a mixing bowl, combine the drained tuna, mayonnaise, Dijon mustard, red onion, celery, pickle relish, lemon juice, salt, and pepper. Mix until well combined and taste to adjust seasoning if necessary.

Fill the Avocados: Place the avocado halves on a baking sheet. Generously fill each avocado half with the tuna salad mixture.

Add Cheese: Top each stuffed avocado with shredded cheddar cheese, spreading it evenly over the tuna salad.

Bake the Melts: Bake in the preheated oven for about 10-15 minutes, or until the cheese is melted and bubbly.

Serve: Remove from the oven and let cool slightly. Garnish with fresh parsley and, if desired, add sliced tomatoes on top for extra flavor. Serve warm.

Enjoy your cheesy stuffed avocado tuna melts as a delicious lunch or dinner option!
