Ingredients

4 large banana peppers

1 cup cooked rice (white or brown)

1 cup ground turkey or beef

1 cup black beans, drained and rinsed

1 cup corn, fresh or frozen

1 cup diced tomatoes (canned or fresh)

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon cumin

1 teaspoon smoked paprika

1 teaspoon oregano

Salt and pepper to taste

1 cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro or parsley for garnish

1 avocado, sliced (optional)

Lime wedges for serving

Instructions

Prep the Banana Peppers: Preheat your oven to 375°F (190°C). Cut the tops off the banana peppers, and remove the seeds and membranes. Rinse under cold water to cleanse them of any lingering seeds.

Cook the Filling: In a skillet over medium heat, add a splash of oil and sauté the chopped onion until translucent, about 3-4 minutes. Add the minced garlic and cook for another 1-2 minutes until fragrant.

Brown the Protein: Add the ground turkey or beef to the skillet, breaking it apart with a spatula. Cook until browned and fully cooked through, about 7-10 minutes. Drain excess grease if necessary.

Combine Ingredients: In a large bowl, mix the cooked protein, cooked rice, black beans, corn, diced tomatoes, cumin, smoked paprika, oregano, salt, and pepper until thoroughly combined.

Stuff the Peppers: Carefully spoon the filling into each banana pepper until they are generously filled. Place the stuffed peppers upright in a baking dish.

Bake the Peppers: Cover the baking dish with foil and bake for 25-30 minutes. Remove the foil and sprinkle the shredded cheese over the tops of the peppers. Return to the oven and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

Assemble the Rice Bowls: While the peppers are baking, prepare your rice bowls. Fill bowls with some cooked rice and top with the baked stuffed banana peppers once ready. Garnish with fresh cilantro or parsley, sliced avocado, and lime wedges for an extra zesty kick.

Serve: Enjoy your Stuffed Banana Peppers Inspired Rice Bowl warm, and savor the explosion of flavors in every bite!
