Ingredients

8 slices of thick-cut brioche or challah bread

8 oz cream cheese, softened

1/4 cup powdered sugar

1 tsp vanilla extract

1/4 tsp cinnamon

4 large eggs

1 cup milk

1 tsp vanilla extract (for egg mixture)

1/4 tsp salt

Butter or oil for frying

Fresh berries (strawberries, blueberries, or raspberries) for garnish

Maple syrup for drizzling

Instructions

Prepare the Cream Cheese Filling: In a medium bowl, combine the softened cream cheese, powdered sugar, 1 tsp vanilla extract, and cinnamon. Use a hand mixer or spatula to blend until smooth and fluffy. Set aside.

Assemble the Sandwiches: Take four slices of the brioche or challah bread. Spread a generous layer of the cream cheese mixture on each of the four slices. Top with the remaining four slices to form sandwiches, pressing down gently.

Make the Egg Mixture: In a large bowl, whisk together the eggs, milk, 1 tsp vanilla extract, and salt until well combined and slightly frothy.

Heat the Pan: In a large skillet or griddle, heat a tablespoon of butter or oil over medium heat until it’s hot but not smoking.

Dip the Sandwiches: Carefully dip each sandwich into the egg mixture, allowing it to soak for a few seconds on each side. Make sure not to oversaturate them.

Cook the French Toast: Place the dipped sandwiches on the hot skillet. Cook for about 3-4 minutes per side, or until golden brown and crispy. You may need to do this in batches depending on the size of your skillet.

Serve: Once cooked, remove the stuffed French toast from the skillet and slice them in half diagonally. Serve warm, garnished with fresh berries and a generous drizzle of maple syrup.

Enjoy: Dig in while it’s hot for a perfect breakfast treat!
