Stuffed Sweet Potatoes with BBQ Chicken

4 medium sweet potatoes

2 cups cooked shredded chicken

1 cup BBQ sauce (your favorite brand)

1 cup black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 cup shredded cheddar cheese

1/2 cup plain Greek yogurt or sour cream

2 green onions, sliced

Salt and pepper to taste

Fresh cilantro, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Bake the Sweet Potatoes: Wash the sweet potatoes thoroughly and pierce them with a fork several times. Place them on a baking sheet and bake for about 45-60 minutes, or until soft when pierced with a knife.

      Prepare the BBQ Chicken Filling: While the sweet potatoes are baking, mix the shredded chicken with 1 cup of BBQ sauce in a medium bowl. Stir until the chicken is well coated.

        Combine Additional Ingredients: In the same bowl, fold in the black beans and corn. Season with salt and pepper to taste. Set aside.

          Assemble the Stuffed Sweet Potatoes: Once the sweet potatoes are done, remove them from the oven and let them cool slightly. Slice each sweet potato in half lengthwise, and carefully scoop out a little of the flesh to create space for the filling, leaving the skin intact.
