Sweet Apple Cinnamon Oat Bake

2 cups rolled oats

2 large apples, peeled and diced (Granny Smith or Honeycrisp work well)

1 cup almond milk (or any milk of choice)

1/2 cup maple syrup (or honey)

1/4 cup unsweetened applesauce

2 tsp cinnamon

1/2 tsp nutmeg

1/4 tsp salt

1/4 cup chopped walnuts or pecans (optional)

1/4 cup raisins or dried cranberries (optional)

1 tsp vanilla extract

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish with a little oil or cooking spray.

    In a large mixing bowl, combine the rolled oats, cinnamon, nutmeg, and salt. Stir until well-blended.

      In a separate bowl, whisk together the almond milk, maple syrup, applesauce, and vanilla extract until smooth.

        Pour the wet ingredients into the dry oat mixture and stir to combine thoroughly.

          Fold in the diced apples, walnuts (if using), and raisins or cranberries (if using) until evenly distributed.

            Transfer the oat mixture into the prepared baking dish and spread it out evenly.

              Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the oats are set.

                Remove from the oven and allow to cool for a few minutes before slicing into squares.

                  Serve warm, optionally topped with a drizzle of maple syrup or a dollop of yogurt.
