Ingredients

2 large flour tortillas

1 large apple (e.g., Granny Smith or Honeycrisp), peeled and thinly sliced

2 tablespoons peanut butter (or almond butter)

2 tablespoons honey (or maple syrup for a vegan option)

1 teaspoon cinnamon

1/4 cup granola (or crushed nuts for extra crunch)

Optional: 1 tablespoon raisins or dried cranberries

Optional: Powdered sugar for dusting

Instructions

Prepare the Fruit: Start by peeling the apple and slicing it into thin wedges. If you're using any dried fruits like raisins or cranberries, set them aside for later.

Mix Sweet Spread: In a small bowl, combine the peanut butter (or almond butter) and honey until smooth. Feel free to adjust the sweetness according to your preference.

Spread the Mixture: Lay one flour tortilla flat on a clean surface. Use a spatula or the back of a spoon to spread half of the peanut butter mixture evenly over the tortilla, leaving about an inch border around the edges.

Layer the Apples: Arrange half of the apple slices over the spread, placing them in a row across the center of the tortilla. Sprinkle half of the cinnamon and half of the granola over the apples. If you’re using dried fruit, sprinkle that on as well.

Roll It Up: Starting at one end, carefully roll the tortilla tightly around the filling. Make sure to keep everything well tucked in. Repeat the process with the second tortilla and remaining ingredients.

Slice and Serve: Once both roll-ups are complete, slice each roll-up into bite-sized pieces using a sharp knife. You should get about 8-10 pieces from each roll, totalling around 16-20 pieces.

Optional Dusting: For a touch of sweetness, you can dust the top of the roll-ups with powdered sugar just before serving.

Pack for School: Place the sweet apple roll-ups in a snack container, or wrap them up in parchment paper for an easy and fun school snack!
