1 cup all-purpose flour

1/2 cup whole wheat flour

1/2 cup sugar

1 tablespoon baking powder

1/4 teaspoon salt

1/2 cup butter, melted

1/2 cup buttermilk (or milk with 1/2 tablespoon vinegar)

2 large eggs

1 teaspoon vanilla extract

1 1/2 cups fresh blueberries (you can use frozen, just don't thaw)

Zest of 1 lemon

1/4 teaspoon cinnamon (optional, for an extra flavor boost)

Coarse sugar for sprinkling on top (optional)

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it lightly.

    Mix Dry Ingredients: In a large bowl, whisk together the all-purpose flour, whole wheat flour, sugar, baking powder, salt, and cinnamon (if using).

      Combine Wet Ingredients: In a separate bowl, mix the melted butter, buttermilk, eggs, vanilla extract, and lemon zest together until well combined.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients, and stir gently until just combined. Be careful not to overmix, as this can lead to dense muffins.

          Fold in Blueberries: Gently fold in the fresh blueberries, ensuring they are evenly distributed throughout the batter.
