Ingredients

1 pound chicken tenderloins

1 cup all-purpose flour

1 teaspoon paprika

1 teaspoon garlic powder

½ teaspoon salt

½ teaspoon black pepper

2 large eggs

1 cup panko breadcrumbs

½ cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon lime juice

Fresh cilantro, for garnish (optional)

Lime wedges, for serving

Instructions

Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Prepare Chicken: In a bowl, mix the flour, paprika, garlic powder, salt, and pepper. In a separate bowl, beat the eggs. In a third bowl, place the panko breadcrumbs.

Coat Chicken: Dip each chicken tenderloin first in the flour mixture, ensuring it's evenly coated. Shake off excess flour, then plunge it into the beaten eggs, allowing surplus to drip off. Finally, roll the chicken in the panko breadcrumbs until fully coated.

Bake Chicken: Place the breaded chicken tenders on the prepared baking sheet. Bake in the preheated oven for 15-20 minutes or until golden brown and cooked through, flipping halfway for even cooking.

Make the Sweet Chili Sauce: While the chicken bakes, in a small saucepan, combine the sweet chili sauce, soy sauce, and lime juice. Heat over medium-low heat until warmed through, stirring occasionally.

Toss Chicken: Once the chicken tenders are cooked, transfer them to a large mixing bowl. Pour the sweet chili sauce over the tenders and gently toss to coat.

Serve: Garnish with fresh cilantro (if using) and serve the chicken tenders hot with lime wedges on the side.
