1 cup unsweetened shredded coconut

1 cup almond flour

1/3 cup honey or maple syrup

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1/2 teaspoon sea salt

1 cup dark chocolate chips (dairy-free if desired)

1 tablespoon coconut oil (for chocolate coating)

Optional: Flaked coconut for rolling

Prep the Mixture: In a mixing bowl, combine the shredded coconut, almond flour, honey (or maple syrup), melted coconut oil, vanilla extract, and sea salt. Stir until the mixture is well combined and sticky.

    Shape the Bites: Using your hands, scoop out small portions of the mixture (about a tablespoon each) and roll into balls. Place them on a lined baking sheet. Once all the mixture is shaped into balls, refrigerate for about 30 minutes to firm them up.

      Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and the additional tablespoon of coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.

        Dip the Bites: Remove the chilled coconut balls from the refrigerator. Using a fork, dip each one into the melted chocolate, making sure it's fully coated. Allow the excess chocolate to drip back into the bowl before transferring them back to the lined baking sheet.
