1 cup cornmeal

1 cup all-purpose flour

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup buttermilk (or milk with 1 tablespoon vinegar)

1/3 cup unsalted butter, melted

2 large eggs

1/4 cup honey

1/2 cup frozen or fresh corn kernels (optional)

1/4 cup honey for drizzling (for serving)

Salted butter for serving

Preheat the Oven: Preheat your oven to 400°F (200°C). Grease a 9-inch cast iron skillet or a square baking dish with butter or non-stick spray.

    Mix Dry Ingredients: In a large mixing bowl, combine the cornmeal, all-purpose flour, sugar, baking powder, and salt. Whisk well until all dry ingredients are evenly mixed.

      Combine Wet Ingredients: In another bowl, whisk together the buttermilk, melted butter, eggs, and honey until well blended.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid over-mixing; it’s okay if the batter is a little lumpy. If using, gently fold in the corn kernels.

          Bake the Cornbread: Pour the batter into the prepared skillet or baking dish. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.

            Prepare Honey Butter: While the cornbread is baking, mix together 1/2 cup softened salted butter and 1/4 cup honey in a small bowl until well combined. Set aside.
