Sweet Potato and Avocado Toast

Ingredients
  

1 medium sweet potato, peeled and cubed

1 ripe avocado

2 slices of whole-grain or sourdough bread

1 tablespoon olive oil

Salt and pepper, to taste

1 teaspoon smoked paprika or cayenne pepper (optional, for spice)

Juice of 1/2 lime

Fresh cilantro or parsley, for garnish

Red pepper flakes, for garnish (optional)

Instructions
 

Prepare the Sweet Potato:

    - In a medium pot, bring water to a boil. Add the cubed sweet potato and parboil for about 5-7 minutes, until tender but not falling apart. Drain and set aside to cool.

      Toast the Bread:

        - While the sweet potato is cooling, toast the slices of whole-grain or sourdough bread until they are golden and crispy. You can use a toaster or a skillet.

          Make the Avocado Spread:

            - In a small bowl, mash the ripe avocado with a fork. Add the lime juice, salt, pepper, and smoked paprika (if using) to the mashed avocado. Mix well until creamy.

              Combine:

                - Once the sweet potato is cool, lightly toss them with olive oil, salt, and pepper in a separate bowl.

                  Assemble the Toast:

                    - Spread a generous layer of the avocado mixture on each toasted slice of bread. Top with the parboiled sweet potatoes evenly on each slice.

                      Garnish:
