Sweet Potato and Turkey Skillet

1 lb ground turkey

2 medium sweet potatoes, diced

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper (any color), chopped

1 cup black beans, drained and rinsed

1 tsp smoked paprika

1 tsp cumin

½ tsp chili powder

½ tsp salt

¼ tsp black pepper

2 tbsp olive oil

½ cup corn (fresh or frozen)

Fresh cilantro, chopped (for garnish)

Optional: 1 avocado, diced (for serving)

Instructions
 

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and sauté for about 10-12 minutes, stirring occasionally, until they are tender and starting to brown. Remove them from the skillet and set aside.

    Cook the Turkey: In the same skillet, add another tablespoon of olive oil. Add chopped onion and bell pepper, and sauté for about 5 minutes until the vegetables are softened. Add the minced garlic and cook for an additional minute until fragrant.

      Add Ground Turkey: Increase the heat to medium-high and add the ground turkey to the skillet. Cook until the turkey is no longer pink, breaking it apart with a spatula (about 5-7 minutes).

        Season It: Sprinkle in the smoked paprika, cumin, chili powder, salt, and black pepper. Mix well to coat the turkey and vegetables with the spices.

          Combine: Add the cooked sweet potatoes, black beans, and corn to the turkey mixture. Stir everything together and cook for an additional 5 minutes until heated through.

            Serve and Garnish: Remove from heat and garnish with fresh cilantro. If desired, add diced avocado on top for a creamy finish.
