1 can (15 oz) chickpeas, drained and rinsed

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon ground cumin

For the Bowl:

2 cups cooked quinoa (or your preferred grain)

2 cups baby spinach or kale

1 avocado, sliced

1/2 cup cherry tomatoes, halved

1/4 cup feta cheese (optional, for a non-vegan option)

1/4 cup tahini dressing or your favorite dressing

Fresh herbs (parsley or cilantro) for garnish

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Roast the Sweet Potatoes:
