2 medium sweet potatoes

4 large eggs

1 avocado, mashed

1 cup fresh spinach

1 teaspoon olive oil

1 teaspoon garlic powder

Salt and pepper, to taste

1/2 teaspoon red chili flakes (optional)

Fresh herbs for garnish (like parsley or cilantro)

Prep the Sweet Potatoes: Start by washing the sweet potatoes thoroughly. Slice them into 1/2 inch thick rounds. You should get about 6-8 rounds depending on the size of the sweet potatoes.

    Roast the Rounds: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and arrange the sweet potato rounds in a single layer. Brush them lightly with olive oil and sprinkle with garlic powder, salt, and pepper. Roast in the oven for 25-30 minutes or until they are tender and slightly caramelized, flipping halfway through.

      Cook the Spinach: While the sweet potatoes are roasting, heat a small pan over medium heat. Add a teaspoon of olive oil and toss in the fresh spinach. Sauté for about 2-3 minutes until wilted. Set aside.

        Fry the Eggs: In the same pan, you can cook your eggs sunny-side up or however you prefer. Season them with a little salt and pepper. If you like it spicy, sprinkle red chili flakes on top while they cook.

          Assemble the Toasts: On each roasted sweet potato round, spread a generous layer of mashed avocado. Top with a few sautéed spinach leaves and then place a fried egg on top of each.
