Ingredients

1 cup fresh raspberries (or frozen, thawed)

1/4 cup maple syrup (or honey)

1/4 cup water

2 tablespoons chia seeds

1 cup rolled oats

1/2 cup almond flour (or any flour of your choice)

1/4 teaspoon salt

1 teaspoon vanilla extract

1 teaspoon cinnamon (optional)

1/4 cup coconut oil, melted

Instructions

Prepare the Raspberry Mixture:

    - In a small saucepan over medium heat, combine the raspberries, maple syrup, and water. Cook for about 5 minutes until the raspberries break down and create a chunky sauce.

      - Stir in the chia seeds and cook for an additional 2-3 minutes until the mixture thickens slightly. Remove from heat and let it cool.

        Preheat the Oven:

          - Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper, leaving some overhang to make it easier to remove the squares later.

            Mix the Dry Ingredients:

              - In a large mixing bowl, combine the rolled oats, almond flour, salt, vanilla extract, and cinnamon (if using). Stir until well combined.

                Combine the Wet Ingredients:

                  - In another bowl, whisk the melted coconut oil into the raspberry-chia mixture until fully incorporated.

                    Combine Mixtures:

                      - Pour the raspberry mixture into the dry ingredients. Stir everything together until evenly mixed.

                        Bake:

                          - Spread the mixture evenly in the prepared baking dish. Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the center is set.

                            Cool and Cut:

                              - Remove from the oven and let it cool in the baking dish for about 10 minutes. Then, use the parchment paper to lift it out and place it on a wire rack to cool completely. Once cool, cut into squares.

                                Serve:

                                  - Enjoy your Sweet Raspberry Chia Squares as a healthy snack or a delightful breakfast treat! Store any leftovers in an airtight container in the refrigerator for up to one week.
