1 cup rolled oats

1 cup shredded coconut (unsweetened)

1/2 cup almond flour

1/2 cup maple syrup or honey

1/4 cup coconut oil, melted

1 teaspoon vanilla extract

1 cup fresh or frozen raspberries

1/4 teaspoon salt

1/4 teaspoon baking powder

Optional: 1/4 cup dark chocolate chips for drizzling

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, shredded coconut, almond flour, salt, and baking powder. Stir well until evenly mixed.

      Combine Wet Ingredients: In a separate bowl, whisk together the melted coconut oil, maple syrup (or honey), and vanilla extract until smooth and well blended.

        Combine Mixtures: Pour the wet ingredients into the dry mixture and stir until fully incorporated. The mixture should start to hold together.

          Fold in Raspberries: Gently fold in the raspberries, being careful not to crush them too much.

            Press into Pan: Transfer the mixture into the prepared baking pan. Use your hands or the back of a spoon to press it down firmly and evenly, creating a compact layer.

              Bake: Place the pan in the preheated oven and bake for approximately 25-30 minutes, or until the edges are golden brown and the center is set.

                Cool and Cut: Once baked, remove the pan from the oven and allow it to cool completely in the pan on a wire rack. Once cool, lift the parchment paper out and place it onto a cutting board. Cut into squares or bars.

                  Optional Chocolate Drizzle: If desired, melt the dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. Drizzle over the top of the cooled slices for an extra touch of sweetness.
