Ingredients

2 cups rolled oats

1 ½ cups almond milk (or any milk of choice)

1/3 cup maple syrup (or honey)

1 teaspoon vanilla extract

1 teaspoon cinnamon

1/2 teaspoon salt

1 cup fresh strawberries, diced

1/4 cup almond butter (or peanut butter)

1/4 cup chopped nuts (e.g., walnuts or almonds) for topping

Optional: Greek yogurt or plant-based yogurt for serving

Instructions

Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease a muffin tin with cooking spray or line it with silicone muffin cups for easy removal.

Mix the Base: In a large mixing bowl, combine the rolled oats, almond milk, maple syrup, vanilla extract, cinnamon, and salt. Stir until well mixed.

Add Strawberries: Gently fold in the diced strawberries. Make sure they are evenly distributed throughout the mixture.

Fill Muffin Cups: Pour the oat mixture evenly into the prepared muffin tin, filling each cup about 3/4 full. Use a spoon to press down lightly to ensure everything stays compact.

Add Toppings: Drizzle a small amount of almond butter over the top of each oat cup. Sprinkle chopped nuts on top for added crunch and flavor.

Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, until the tops are golden brown and the oat cups are set.

Cool and Serve: Allow the oat cups to cool in the tin for about 10 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature. Serve with a dollop of Greek yogurt or plant-based yogurt if desired.
