1 ¾ cups (200g) powdered sugar

1 cup (110g) almond flour

3 large egg whites, aged at room temperature

¼ cup (50g) granulated sugar

1 teaspoon vanilla extract

A pinch of salt

Red food coloring (gel)

For the Strawberry Buttercream Filling:

½ cup (1 stick) unsalted butter, softened

2 cups (240g) powdered sugar

3 tablespoons fresh strawberry puree (see notes)

1 teaspoon vanilla extract

Prepare the Ingredients: Start by sifting the powdered sugar and almond flour together in a bowl to remove lumps; set aside.

    Make the Meringue: In a clean, dry mixing bowl, using an electric mixer, beat the aged egg whites on medium speed until frothy. Gradually add the granulated sugar while increasing to high speed. Continue beating until stiff peaks form. The meringue should be glossy.

      Add Flavor and Color: Gently fold in the vanilla extract, a pinch of salt, and red food coloring until you achieve a uniform color. Be careful not to deflate the meringue.

        Combine the Mixtures: Sift the almond flour and powdered sugar mixture into the meringue in three batches. Carefully fold the dry ingredients into the meringue until fully incorporated. You want the batter to be thick and shiny, and to flow like lava when you lift the spatula.

          Pipe the Shells: Transfer the macaron batter into a piping bag fitted with a round tip (about 1/2 inch). Line two baking sheets with parchment paper or silicone mats. Pipe 1.5-inch circles, leaving about an inch of space between each macaron.

                      Assemble the Macarons: Pair macaron shells of similar sizes. Pipe a dollop of strawberry buttercream onto the flat side of one shell and gently press the matching shell on top to create a sandwich.

                        Mature and Serve: For best flavor, let the assembled macarons chill in the fridge for at least 24 hours. Bring to room temperature before serving to enhance the flavor and texture.
