Ingredients

1 lb boneless, skinless chicken breasts

2 medium zucchinis (zoodled)

1 cup cherry tomatoes, halved

1 cup corn (fresh or frozen)

1 can black beans, rinsed and drained

1 tablespoon olive oil

1 packet taco seasoning (or homemade)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1 avocado, diced

1/4 cup fresh cilantro, chopped

1 lime, cut into wedges

Optional toppings: shredded cheese, sour cream, jalapeños, salsa

Instructions

Prepare the Chicken: Start by heating the olive oil in a large skillet over medium-high heat. Season the chicken breasts with taco seasoning, garlic powder, onion powder, salt, and pepper on both sides. Add the chicken to the skillet and cook for about 6-7 minutes per side, or until fully cooked and no longer pink in the middle. Remove from the skillet and let it rest for a few minutes.

Zoodle Preparation: While the chicken is cooking, spiralize the zucchinis to create zoodles. If you don’t have a spiralizer, you can use a vegetable peeler to create thin strips.

Cook Zoodles: In the same skillet, add the zoodles and sauté for 2-3 minutes until they are tender but still have a bit of crunch. Be careful not to overcook them, as they can become mushy. Remove the zoodles from the skillet and set aside.

Combine Ingredients: In the same skillet, combine the cherry tomatoes, corn, and black beans. Cook for about 3-5 minutes until warmed through.

Slice the Chicken: Slice the cooked chicken into strips or bite-sized pieces.

Assembly: To assemble the bowls, start with a base of zoodles. Top with the chicken, then the corn and bean mixture, halved cherry tomatoes, and diced avocado.

Garnish: Sprinkle with chopped cilantro and add lime wedges on the side. Feel free to add any optional toppings like shredded cheese, sour cream, jalapeños, or salsa according to your preference.

Serve: Enjoy your delicious and healthy Taco Chicken Zoodle Bowls immediately, squeezing fresh lime juice over the top for an added burst of flavor!
