Thai Style Crab Fried Rice

Ingredients
  

2 cups cooked jasmine rice (preferably day-old)

200 grams fresh crab meat (lump or backfin)

2 tablespoons vegetable oil

3 cloves garlic, minced

2 eggs, beaten

1 cup mixed vegetables (peas, carrots, and bell pepper)

3 green onions, finely chopped

2 tablespoons soy sauce

1 tablespoon fish sauce

1 tablespoon oyster sauce

1 tablespoon lime juice

Salt and pepper to taste

Fresh cilantro, for garnish

Lime wedges, for serving

Sliced red chili (optional, for garnish)

Instructions
 

Prep the Rice: If using day-old rice, break up any clumps with a fork. If using freshly cooked rice, spread it out on a baking sheet to cool for about 30 minutes to prevent it from becoming mushy.

    Cook the Eggs: Heat 1 tablespoon of vegetable oil in a large non-stick skillet or wok over medium-high heat. Pour in the beaten eggs and scramble until just set. Remove from the skillet and set aside.

      Sauté Aromatics: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

        Add Vegetables: Add the mixed vegetables to the skillet and stir-fry for 2-3 minutes until they are heated through and slightly tender.

          Combine Ingredients: Add the cooked rice to the skillet. Stir in the cooked crab meat gently to combine with the vegetables and rice.

            Season the Rice: Drizzle in the soy sauce, fish sauce, oyster sauce, and lime juice. Stir-fry everything together for another 3-4 minutes, allowing the sauces to coat the rice evenly. Taste and adjust with salt and pepper as needed.

              Add Eggs & Onions: Gently fold in the scrambled eggs and chopped green onions. Cook for an additional 1-2 minutes, stirring well to mix all the ingredients.

                Garnish & Serve: Remove from heat and garnish with fresh cilantro and sliced red chili if using. Serve hot with lime wedges on the side for squeezing over the dish.
