Tofu Skewers with Strawberry Salsa

For the Tofu Skewers:

1 block (14 oz) firm tofu, drained and pressed

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon maple syrup

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper, to taste

Wooden or metal skewers (if using wooden skewers, soak them in water for 20 minutes)

For the Strawberry Salsa:

1 cup fresh strawberries, hulled and diced

1/4 cup red onion, finely chopped

1 jalapeño, seeded and minced (optional for heat)

1/4 cup cilantro, chopped

Juice of 1 lime

Salt and pepper, to taste

Prepare the Tofu:

    - Cut the pressed tofu into 1-inch cubes. Set aside.

      Marinate the Tofu:

        - In a mixing bowl, whisk together the olive oil, soy sauce, maple syrup, garlic powder, smoked paprika, salt, and pepper. Add the tofu cubes to the marinade, making sure they are well coated. Allow them to marinate for at least 30 minutes (or up to overnight in the refrigerator for deeper flavor).

          Prepare the Strawberry Salsa:

            - In a separate bowl, combine the diced strawberries, red onion, jalapeño (if using), cilantro, lime juice, and a pinch of salt and pepper. Toss gently to combine. Set aside to let the flavors meld.
