12 oz cheese tortellini (fresh or dried)

1 cup cherry tomatoes, halved

1 cup baby spinach, roughly chopped

1 cup cucumber, diced

½ cup black olives, sliced

½ cup red bell pepper, diced

½ cup red onion, finely chopped

¼ cup fresh basil leaves, chopped

½ cup feta cheese, crumbled

¼ cup extra virgin olive oil

2 tbsp red wine vinegar

1 tsp garlic powder

Salt and pepper, to taste

Cook the Tortellini: Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions until al dente (usually about 3-5 minutes for fresh, and 7-9 for dried). Drain and rinse under cold water to stop the cooking process. Allow to cool.

    Prepare the Vegetables: While the tortellini is cooling, chop the cherry tomatoes, baby spinach, cucumber, red bell pepper, and red onion. Place them all in a large mixing bowl.

      Make the Dressing: In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, garlic powder, salt, and pepper until well combined.

        Combine Salad Ingredients: Once the tortellini has cooled, add it to the mixing bowl with the chopped vegetables. Add the sliced black olives, chopped basil, and crumbled feta cheese.
