Ultimate Grilled Cheese Sloppy Joes Recipe

1 lb ground beef (or plant-based substitute)

1 small onion, diced

1 bell pepper, diced (any color)

2 cloves garlic, minced

1 cup ketchup

1 tbsp Worcestershire sauce

1 tbsp brown sugar

1 tsp mustard powder

Salt and pepper, to taste

8 slices of sharp cheddar cheese

8 slices of bread (sourdough or Texas toast work great)

4 tbsp butter, softened

Optional toppings: pickles, jalapeños, or fresh herbs

Instructions
 

Prepare the Meat Mixture:

    In a large skillet over medium heat, add a splash of oil and sauté the diced onion and bell pepper until softened (about 5 minutes). Add the minced garlic and cook for another minute until fragrant.

      Brown the Beef:

        Add the ground beef to the skillet. Cook until browned, breaking it apart with a wooden spoon (approximately 6-8 minutes). Drain excess fat if necessary.

          Create the Sloppy Joe Sauce:

            Stir in the ketchup, Worcestershire sauce, brown sugar, mustard powder, salt, and pepper into the meat mixture. Reduce heat to low and let it simmer for about 10 minutes, stirring occasionally, until the sauce thickens.

              Prepare the Grilled Cheese:

                Preheat a large skillet or griddle over medium-low heat. Spread softened butter on one side of each slice of bread.

                  Assemble the Sandwiches:

                    Place 4 slices of bread, butter-side down, in the skillet. Layer 2 slices of cheddar cheese on each slice of bread. Then, generously spoon the sloppy joe mixture on top followed by an additional slice of cheddar cheese. Finally, place the remaining slices of bread on top, butter-side up.

                      Grill to Perfection:

                        Cook for about 4-5 minutes, or until the bottom of the sandwiches are golden brown and crispy. Carefully flip each sandwich and cook for another 4-5 minutes on the other side, pressing down slightly to ensure it grills evenly.
