2 cups milk (dairy or non-dairy)

2 large eggs

¼ cup maple syrup (or honey)

2 teaspoons vanilla extract

2 medium apples, peeled, cored, and diced

½ cup walnuts or pecans, chopped (optional)

½ cup raisins or dried cranberries (optional)

2 tablespoons butter or coconut oil, melted

Additional cinnamon for sprinkling (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C) and greasing a 9x13-inch baking dish with cooking spray or a little butter.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, ground cinnamon, and salt. Stir well to ensure the baking powder is evenly distributed.
