Watermelon Kiwi Layered Pops

Ingredients
  

4 cups watermelon, pureed and strained

2 tablespoons honey (or maple syrup for vegan)

Juice of 1 lime

4 ripe kiwis, peeled and diced

1 cup coconut water

1/2 cup Greek yogurt (or a dairy-free alternative)

Fresh mint leaves for garnish (optional)

Instructions
 

In a blender, combine the pureed watermelon, honey, and lime juice. Blend until smooth.

    Pour the watermelon mixture into popsicle molds until they are filled halfway.

      Put the molds in the freezer and allow them to set for about 1-2 hours or until slightly firm.

        While the watermelon layer is freezing, prepare the kiwi layer. In a bowl, mix the diced kiwis with the coconut water and Greek yogurt until well combined.

          After the first layer has set, remove the popsicle molds from the freezer and carefully spoon the kiwi mixture on top of the watermelon layer, filling the molds to the top.

            Insert popsicle sticks into the molds and return them to the freezer. Freeze for at least 4 hours or until completely solid.

              To remove the popsicles, run warm water over the outside of the molds for a few seconds until loosened.

                Serve the popsicles garnished with fresh mint leaves for an extra burst of flavor.
