2 cups cooked and shredded chicken (you can use rotisserie chicken)

1 can (10 oz) green enchilada sauce

1 cup sour cream

1 cup cream cheese, softened

1 cup shredded Monterey Jack cheese

1 cup shredded cheddar cheese

8 small flour tortillas

1 can (4 oz) diced green chilies (optional for added heat)

1 tsp garlic powder

1 tsp onion powder

1 tsp cumin

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional, for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Prepare the Mixture: In a large mixing bowl, combine the shredded chicken, 1/2 cup of green enchilada sauce, sour cream, softened cream cheese, garlic powder, onion powder, cumin, salt, and pepper. Mix until well combined and creamy.

      Layer the Casserole: Spread a thin layer (about 1/2 cup) of the remaining enchilada sauce on the bottom of a greased 9x13-inch baking dish. Place 4 tortillas over the sauce, slightly overlapping them.

        First Layer of Filling: Spoon half of the chicken mixture over the tortillas, spreading it evenly. Sprinkle with half the Monterey Jack and cheddar cheese.

          Repeat the Layers: Add another layer of 4 tortillas, followed by the remaining chicken mixture. Top with the remaining tortillas and pour the remaining green enchilada sauce over the top. Finally, sprinkle with the remaining Monterey Jack and cheddar cheese.

            Bake the Casserole: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

              Cool and Garnish: Once done, remove from the oven and let it cool for about 5 minutes. Garnish with chopped cilantro and serve with sliced jalapeños if desired.
