Preheating your oven to the right temperature is crucial for achieving that perfect crispiness in your Buffalo cauliflower. Aim for 450°F (232°C). This high temperature allows for quick cooking, which helps to retain the cauliflower's moisture while providing a crunchy exterior. Make sure to give your oven enough time to reach this temperature before you place your cauliflower inside. This initial step sets the foundation for a satisfying texture that contrasts beautifully with the creamy components of your wrap.

Ingredients

1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour for a gluten-free option)

1 teaspoon garlic powder

1 teaspoon paprika

1 teaspoon onion powder

1/2 teaspoon cayenne pepper (adjust for heat)

1 teaspoon salt

1 cup water (or non-dairy milk for added creaminess)

1 cup buffalo sauce (store-bought or homemade)

4 large whole wheat or gluten-free wraps

1 cup shredded lettuce (romaine or butter lettuce)

1/2 cup diced tomatoes

1/4 cup chopped green onions

1 avocado, sliced

Optional: ranch or blue cheese dressing for drizzling

Instructions

Preheat the Oven: Preheat your oven to 450°F (232°C) and line a large baking sheet with parchment paper.

Prepare Cauliflower Battering: In a large mixing bowl, whisk together flour, garlic powder, paprika, onion powder, cayenne pepper, and salt. Gradually add water (or non-dairy milk) to the dry ingredients, mixing until you achieve a smooth batter.

Coat the Cauliflower: Dip each cauliflower floret into the batter, ensuring they are well coated. Remove excess batter before placing the florets on the prepared baking sheet.

Bake the Cauliflower: Bake in the preheated oven for 20-25 minutes or until the cauliflower is crispy and golden, flipping halfway through for even cooking.

Toss in Buffalo Sauce: Once the florets are baked, transfer them to a large bowl and drizzle with buffalo sauce. Toss gently until all florets are evenly coated in the sauce.

Assemble the Wraps: Lay out a whole wheat or gluten-free wrap on a clean surface. Start with a bed of shredded lettuce, followed by a generous scoop of the zesty buffalo cauliflower. Top with diced tomatoes, chopped green onions, and avocado slices. Drizzle with ranch or blue cheese dressing, if using.

Wrap it Up: Fold in the sides of the wrap and roll it tightly from the bottom up to enclose the fillings. Repeat for the remaining wraps.

Serve: Cut them in half and serve with extra buffalo sauce or dressing on the side for dipping.
