1 cup arugula or spinach

1/2 medium zucchini, thinly sliced

1/2 medium bell pepper (any color), thinly sliced

1 small carrot, grated

1/4 cup roasted red peppers, sliced

1/4 cup fresh mozzarella, sliced (or vegan alternative)

2 tablespoons basil pesto (store-bought or homemade)

Balsamic glaze for drizzling (optional)

Prepare the Veggies: In a bowl, combine zucchini, bell pepper, and grated carrot. Drizzle with 1 tablespoon olive oil, minced garlic, red pepper flakes, sea salt, and black pepper. Toss to coat and set aside for 10 minutes to marinate.
