4 medium zucchinis (for zoodles)

1 cup heavy cream

1 cup grated Parmesan cheese

2 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon nutmeg (freshly grated if possible)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: Crushed red pepper flakes for a little heat

Prepare the Zoodles: Using a spiralizer, create zoodles (zucchini noodles) from the zucchinis. If you don't have a spiralizer, you can use a julienne peeler or a mandoline with a julienne attachment. Set the zoodles aside.

    Sauté the Garlic: In a large skillet, melt the butter over medium heat. Once melted, add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.

      Make the Alfredo Sauce: Pour in the heavy cream and bring it to a simmer. Stir continuously for about 2-3 minutes, allowing it to thicken slightly.

        Add the Cheese: Lower the heat and gradually whisk in the grated Parmesan cheese until it has melted and the sauce is smooth.

          Season the Sauce: Add nutmeg, salt, and pepper to taste. If you like a kick, sprinkle in some crushed red pepper flakes.

            Combine Zoodles with Sauce: Add the zoodles to the skillet, gently tossing them in the creamy Alfredo sauce until fully coated. Cook for an additional 2-3 minutes, just enough to warm the zoodles without making them soggy.

              Garnish and Serve: Once the zoodles are cooked to your desired doneness, remove from heat. Plate the zoodle Alfredo and garnish with fresh parsley. Serve immediately and enjoy!
