Zucchini Apple Cinnamon Bake

2 medium zucchinis, grated

2 medium apples, peeled and diced (preferably Granny Smith or Honeycrisp)

1 cup rolled oats

1/2 cup almond flour (or whole wheat flour)

1/2 cup brown sugar (or coconut sugar)

1/4 cup maple syrup

1 teaspoon baking powder

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/2 cup chopped walnuts or pecans (optional)

2 large eggs (or flax eggs for a vegan option)

1 teaspoon vanilla extract

1/4 cup melted coconut oil or unsalted butter

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking dish with a little coconut oil or non-stick spray.

    Prep Zucchini and Apples: Grate the zucchinis using a box grater and squeeze out excess moisture using a clean kitchen towel. Peel and dice the apples into small cubes.

      Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, brown sugar, baking powder, cinnamon, nutmeg, and salt. Stir until well mixed.

        Mix Wet Ingredients: In another bowl, whisk together the eggs, maple syrup, vanilla extract, and melted coconut oil until fully combined.
