4 medium zucchinis

2 boneless, skinless chicken breasts

1 tablespoon olive oil

Salt and pepper, to taste

1 teaspoon garlic powder

1 teaspoon onion powder

1 cup romaine lettuce, chopped

1/2 cup Caesar dressing (store-bought or homemade)

1/4 cup grated Parmesan cheese

1/4 cup croutons (optional, for garnish)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Zucchini: Cut the zucchinis in half lengthwise and scoop out the center using a spoon to create boat shapes. Ensure to leave enough flesh so they remain sturdy. Set aside.

      Cook the Chicken: In a medium skillet, heat the olive oil over medium heat. Season the chicken breasts with salt, pepper, garlic powder, and onion powder. Add the chicken to the skillet and cook for about 6-7 minutes on each side, or until fully cooked (internal temperature should reach 165°F). Remove from heat and let it cool slightly before shredding.

        Assemble the Filling: In a mixing bowl, combine the shredded chicken, chopped romaine lettuce, Caesar dressing, and half of the grated Parmesan cheese. Mix until the ingredients are well combined.

          Stuff the Zucchini Boats: Place the zucchini halves on a baking sheet. Carefully spoon the chicken mixture into each zucchini boat, filling them generously.

            Add Toppings: Sprinkle the remaining Parmesan cheese over the stuffed zucchini boats. If desired, add croutons on top for extra crunch.
