For the Zucchini Batter:

1 ½ cups grated zucchini (about 2 medium zucchinis, excess moisture squeezed out)

1 cup all-purpose flour

¾ cup granulated sugar

½ cup vegetable oil

3 large eggs

1 tsp vanilla extract

1 tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

For the Chocolate Batter:

½ cup all-purpose flour

¼ cup unsweetened cocoa powder

½ tsp baking powder

½ tsp baking soda

¼ tsp salt

¼ cup granulated sugar

¼ cup vegetable oil

1 large egg

½ tsp vanilla extract

Optional Toppings:

Chopped walnuts or pecans (1/4 cup)

Powdered sugar for dusting

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a standard 9x5-inch loaf pan.

    Prepare Zucchini Batter: In a large mixing bowl, combine the grated zucchini, 1 cup flour, ¾ cup sugar, ½ cup oil, 3 eggs, and 1 tsp vanilla extract. Mix well until combined. Add in baking powder, baking soda, salt, and cinnamon, and stir until just incorporated.

      Prepare Chocolate Batter: In a separate bowl, combine ½ cup flour, cocoa powder, ½ tsp baking powder, ½ tsp baking soda, ¼ tsp salt, and ¼ cup sugar. Mix well. In another bowl, whisk together ¼ cup oil, 1 egg, and ½ tsp vanilla. Pour wet ingredients into the dry ingredients, mixing until just blended.
