2 medium zucchinis, grated

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 large egg, beaten

1 teaspoon garlic powder

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup mini pepperoni slices

1/2 cup marinara sauce (for dipping)

Fresh basil leaves (optional, for garnish)

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Zucchini: Grate the zucchinis using a box grater. Place the grated zucchini in a clean kitchen towel or cheesecloth and squeeze out as much moisture as possible.

      Mix the Batter: In a large mixing bowl, combine the grated zucchini, shredded mozzarella, grated Parmesan, beaten egg, garlic powder, oregano, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

        Form the Bites: Using your hands, take a small handful of the mixture and form bite-sized patties (about 1.5 inches in diameter) and place them on the prepared baking sheet. Leave a little space between each bite.

          Add Pepperoni: Press a few mini pepperoni slices into the top of each zucchini bite, ensuring they stick into the mixture.

            Bake: Bake in the preheated oven for about 15-20 minutes, or until the bites are golden brown and firm to the touch.
