2 medium zucchinis, grated

1 cup breadcrumbs (panko recommended for extra crunch)

½ cup grated Parmesan cheese

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon dried oregano

Salt and pepper, to taste

Olive oil spray (for baking)

Instructions
 

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and spray lightly with olive oil.

    In a clean kitchen towel or cheesecloth, squeeze the grated zucchini to remove excess moisture. This step is crucial for achieving crispy nuggets.

      In a large mixing bowl, combine the drained zucchini, breadcrumbs, Parmesan cheese, eggs, garlic powder, onion powder, dried oregano, salt, and pepper. Mix everything until well combined.

        Using your hands, form the mixture into small nugget shapes (about 1-2 tablespoons each) and place them on the prepared baking sheet.

          Lightly spray the tops of the nuggets with olive oil spray to help them crisp up during baking.

            Bake in the preheated oven for 20-25 minutes, turning the nuggets halfway through, until they are golden brown and crispy.

              Once cooked, remove from the oven and let them cool for a few minutes before serving.

                Serve warm with your favorite dipping sauce, such as marinara, ranch, or tzatziki.
