2 medium zucchinis, grated

1 cup rolled oats

1/2 cup almond flour

1/2 cup shredded cheese (cheddar or mozzarella)

1/4 cup finely chopped green onions

2 large eggs

1/4 cup freshly grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup chopped fresh parsley (optional)

Cooking spray or olive oil for greasing the baking dish

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a 9x9-inch baking dish with parchment paper, leaving a little overhang for easy removal later. Lightly grease the parchment with cooking spray or olive oil.

    Prepare the Zucchini: Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or cheese cloth, and squeeze out any excess moisture to prevent the bars from becoming soggy.

      Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, shredded cheese, green onions, garlic powder, onion powder, paprika, salt, pepper, and parsley (if using). Stir until all ingredients are well incorporated.

        Combine Wet Ingredients: In a separate bowl, whisk the eggs until frothy. Add the grated zucchini and grated Parmesan cheese, mixing until well combined.

          Combine Mixtures: Pour the zucchini mixture into the dry ingredients bowl. Stir until everything is thoroughly combined. The mixture should be thick and slightly sticky.

            Transfer to Baking Dish: Evenly spread the mixture into the prepared baking dish, pressing it down gently to create a uniform layer.
